I mentioned this on the Millwallmad board and Daggers is spitting mad. quite rightly so.

I agree.
See the trouble with the fan assisted oven is yes it cooks the meat quicker but meat cooked quick tends to spit.
It is best to braize the joint first and cook on a lower heat to avoid spitting.

Also for the more discerning connoisseur a George Foreman grill stops the meat spitting.
A touch of light spray oil helps. .......But only a touch.
