I have a small tupaware tub in the freezer. As the fruit ripen I drop them into the tub.
Str from freezer and slice I would say they loose about 20% of the heat over time.

That's why I make the sauce straight away. Got some in empty Orkney craft vinegar bottles as they have a cork, then store them on their side to keep the cork wet.
My weekend ritual is 3 or 4 pints of Space Dust (8.2 %) in my local followed by an authentic Chicken Phaal and a few pints of Taj in the Indian next door. There may be quite a few chillies in this I reckon. Never had a problem in 20 years.
The weekends 20 years prior to this consisted of ordering an Indian at Kamrans, calling into the newsagents to buy a Green 'un from John Bettany and reading the results over a few pints in t'Hoss Shoes , then collecting the Indian and taking it home and eating it with a nice red before shagging Mrs Sota for the rest of the night.
Oh well, life's a bugger eh.

The weekends prior to that consisted of eating Shauket Ali's hottest hottest curries for numerous bets and eating full jars of Colman's mustard for dessert. Happy days.
