Prior to lockdown the Dutch were on a 15 to 20 year roll of an ever growing number of Michelin Star restaurants. I know of 2, both run by 20 somethings, who had been visited by the Michelin gurus. Both fell a smidgin short but got recommendations from Michelin on how to make the step up to getting a star. When Covid hit, the young lady running one of them got a tremendous offer for the business and.... it's now a pretty basic Italian restaurant that Michelin won't even visit. Having seen the simplistic menu, I won't be visiting either. The other restaurant has simplified its menu for the duration of Covid and will go back to the quality stuff once this 'demic is over and will be implementing the Michelin recommendations.
We do, however, still have the banal restaurants of old too ;)
