I never have made it mate.
Been doing some spiced pickled onions and shredded red opinion.
Do you recommend a certain recipe?
Yep mine.
1kg cabbage, light coloured, I use sweetheart.
20gram sea salt.
Shred finely and add salt in a large bowl.
Scrunch it up for a few mins, re-do a few more times till you get a load of juice and cabbage reduced in volume.
Pack it down in a large mason jar and cover with the liquid.
Now here's my trick, as it ferments pressure builds up in the jar and you have to burp it regularly.
To get round this I put a hole in the lid,and used a wine airlock and let it bubble away for a week or so.
It is so full of probiotics it's unreal.

My good lady makes it. It absolutely reeks.
Load of *******s again. The gas is carbon dioxide..no aroma .
