Looks more Thai to me - make a lot of those... but this one is sooo nice!
This is it.. (well how I do it...)
600g chicken thighs cut into chunks
2 tbsp curry powder (I use medium hot or jalfrezi - anything really but I usually use some kind of indian one)
1 tbsp garam masala
1 tbsp turmeric
2 tbsp sesame oil
three chopped shallots
three chopped garlic cloves
lump of fresh ginger, chopped (about half a thumb...

)
2 lemon grass stalks, chopped
chilli (I use two big tbsp of dried chilli flakes and seeds I got from work, but you can use fresh)
sweet potatoes to same weight as chicken, cubed
3 tbsp fish sauce
1 tbsp dark brown sugar in 150ml water
2 400ml cans of coconut milk
smallish bunch of fresh basil and fresh coriander
Put the chicken in a bowl, cover with HALF the turmeric, garam masala and curry powder. Mix it so everything is covered. Leave aside for a bit - longer the better but up to you.
Heat the sesame oil in yer wok, add the shallots, garlic, ginger and lemon grass, chuck in the rest of the turmeric, curry powder and garam masala along with whatever chilli you're using, then chuck in the chicken and fry for a few minutes till chicken is sealed.
chuck in the fish sauce, sweet potatoes, coconut milk and sugary water, stir well, bring to the boil then simmer for a while. I usually leave it for 15-20 minutes, which is how long it takes to do the rice... (if you have it with rice - up to you

)
when all done, chuck in the chopped basil and coriander and serve.
The above recipe should do 4-6 decent portions easy...
