I do it on a kettle bbq over indirect heat with the lid on. Baste every 25 mins. And keep an electric probe in the thigh.

I find smoking food a bit of a fad and this way is much easier and more effective.

I made the marinade with lime marmalade. Rum, chillis and cayenne pepper.
