As for a classic Escort, I'd hunt for a mk1 1300E which had a walnut dash and the extra dials like the Cortina 1600E had. both of these are very rare now, there's only a few hundred of each left on the road, hence they command mega bucks if they're in even half decent nick.
One of the best in the medium SUV range is the Nissan Qashqai. British built, reliable, been a huge sales success so plenty available second hand for sensible money. The 1.6 diesel has plenty of torque for towing and it's only £30 a year to tax. If you're adamant it has to be at least 2.0 then hunt
