    Thanks Scum, twice cocked which is what they do in curry houses makes them crunchy...not the healthiest snack though!

    Veg Pakoras - I use courgettes, onions, potatoes and peppers...also I put in crushed seeds of coriander, cumin etc

    Not sure about oversize bhajis though pal can be stodgy inside if they are too big

    Yes, you can do them via a recipe. You don’t need to bring over the chef and his family to do them.

    Going to look that recipe up.

    My Bhajis are low fried then oven baked mate to prevent soggy bottoms. I also make my own Kofti burgers, mint and Creme Fraiche sauce, a chopped onioin and cucumber chilly mix, a quarter of tomato and a limp slice of lettuce. And all this to make it a traditional South Yorkshire starter.

    I make my own naan breads as well which are great but you need cream or creme fraiche during the prep to keep them moist!
