As far as I can remember, a chopper was a bike you put together yourself.
Including of course the stupid seat and extended handlebars.

Big business of course copied this idea with a mass produced product which proved ridiculously popular.

A chipper of course sells chip suppers whereas a chippy is some sort of joiner or carpenter.
