Jose Mourinho was probably the manager who defied the notion that fans demand entertainment. His brand of "anti-football" got such good results at Chelsea, Inter Milan etc. that it was difficult for supporters to argue with it, but he was a remarkable exception to the normal rule.
Broadly speaking, football is an entertainment business, that's why TV companies pay millions to screen it, and if you're not providing sufficient entertainment for a long time, then sooner or later you won't get as much business.
