Veg Pakoras - I use courgettes, onions, potatoes and peppers...also I put in crushed seeds of coriander, cumin etc

Not sure about oversize bhajis though pal can be stodgy inside if they are too big

Going to look that recipe up.

My Bhajis are low fried then oven baked mate to prevent soggy bottoms. I also make my own Kofti burgers, mint and Creme Fraiche sauce, a chopped onioin and cucumber chilly mix, a quarter of tomato and a limp slice of lettuce. And all this to make it a traditional South Yorkshire starter.

I make my own naan breads as well which are great but you need cream or creme fraiche during the prep to keep them moist!

Best nan bread recipe ever (Ive tried well over 12 )

Plain flour (or Maida flour if you can get in from an Indian grocers as its finer)
    2 TBLS of Ghee melted
    1 TBLS Sugar
    2 TBLS salt
    1 egg
    2 TABLS (any)
half a cup of warm water
    yeast

    1. put the yeast and sugar in the warm water and leave for 10-15 mins (it goes mental)
    2. Add all ingredients into the bowl and mix...no kneading reqd.
    3. leave for 2 hours until doubled or trebled in size
    4. roll into 6-8 balls
    5. heat dry pan to max
    6. cook both sides and watch the magic happen

tried it with creme Frech, yogurt in all combinations this produces the best results...FACT!
