My Bhajis are low fried then oven baked mate to prevent soggy bottoms. I also make my own Kofti burgers, mint and Creme Fraiche sauce, a chopped onioin and cucumber chilly mix, a quarter of tomato and a limp slice of lettuce. And all this to make it a traditional South Yorkshire starter.
I make my own naan breads as well which are great but you need cream or creme fraiche during the prep to keep them moist!
